'86 VS750 Forks (and other parts confusion)

Hi All,
I purchased an '86 VS750 back in June up here in Canada, only to find out it needed quite a bit of work. All I have left to find for it for parts are new forks.
When I try and look up the OEM numbers for the forks, most websites don't even have the VS750 listed for 1986, they only have the VS700 listed.VS750 isn't listed until 1988. The OEM part number for an '86 VS700 fork is 51110-38A00, while the OEM part number for an '88 VS750 is 51110-39A41 (formerly listed as 51110-39A00). I also purchased a '91 VS750 because I just wanted to get riding, and it has the same part number as the 88 750. There is a local shop here that has a single fork off an '85 750.
So my questions are,
1. Why don't most websites list the 750 as an option until 1988? (Canada Vs US thing?)
2. how interchangeable are these forks? I only need the inner tube (1 for sure), the sliders and all the guts of the slider are in good shape.
3. Is it possible (or is this a terrible idea) to have the forks straightened? Is this a case by case basis?
