And just what is Designer's Durty Little Secret?.....Why, none other than,......Designer's "Durty" Fajitas!!

Yeah, Yeah,...So what's all the Hub-bub about this "Durty" stuff? [space] Read on and find out! [emoji2]

These are my Beef Fajitas,.... BUT!,...with a "kick". :rock: I added Picante Chorizo to the Recipe in a different way than most might think of.

First, you start out by cutting up the Peppers and Onions to be cooked (Stir-Fired) separate from cooking the Beef (Charcoal Grilled).

On the Large Cutting Board you see the Red, Yellow, and Orange Bell Peppers (for some "color" and sweetness) and Pablano Peppers too (preferred flavor over Green Bell Pepper). [space] And also you see the two Onions,... Purple and Spanish,... because they are Strong in Flavor to compliment the sweet of the Bell peppers.

When you look closer, notice next to each one there is a small pile of really Well-chopped-up Veggie. This is to be used in Sauteing the Chorizo in a Pan. Being cut up so small, they release their flavor almost instantly into the Cooking Chorizo..

On the Small cutting board there is the Veggies that are to be UN-cooked,...Cilantro, Scallions and Roma Tomatoes. These get placed on top of the cooked Meat and Veggies inside the tortilla. [space] And, just before you roll it all up,....a squeeze of Fresh Lemon and Lime! (This is for the Nose as much as it is for the Tongue ;) )

Next, there is the Skirt Steak (no Marinade this time) and Spicy Chorizo.

The Chorizo gets cooked in a pan. Just when the Chorizo Releases some of it's Juiciness, add in the Finely Chopped-up Veggies so they "cook-out" and release all their flavor. (you will see they virtually disappear).

The Steak to be cooked over HOT Charcoals (gotta have that "char" ya know!) [emoji2]

When I finished cooking the Peppers and Onions in the Wok,

I added in the cooked Chorizo and Chopped Veggies.....this made the Peppers/Onions and all look "dirty". So I named this,....Durty Fajitas!
